Mexican Stew

Mexican Stew
This is an old family recipe that really hits the spot on a cold Winters evening.

Serves 5
1 cup diced onion
1 – 2 garlic cloves, finely chopped
1 tablespoon olive oil
3 cups cooked chicken or 3 cups cooked turkey, diced or shredded
1 packet taco seasoning mix
2 cans ready-cut diced tomatoes, un-drained ♦ 1 can black beans or 1 can kidney beans, drained
1 can whole kernel corn, drained ♦ 1 can diced green chilies, drained ♦ 1 cup chicken broth
♦ 1/2 tablespoon cornstarch

Prep time 10 mins cook time 30 mins
Cook onion and garlic in oil in large saucepan until tender. Add cooked chicken, taco seasoning, tomatoes, beans, corn and chilies. Blend broth and cornstarch; add to saucepan. Bring to a boil; reduce heat and simmer 15 minutes; stirring occasionally.
Serve with cornbread for a hearty meal.
